Peki \u00e7\u00f6z\u00fcm ne olacak demez miydik?<\/p>\n\n\n\n<p>Yurt d\u0131\u015f\u0131nda ya\u015fayanlar k\u0131smen de olsa bu i\u015fi \u00e7\u00f6zm\u00fc\u015f, gl\u00fctensiz g\u0131dalar haz\u0131rlam\u0131\u015flar, paketlemi\u015fler, pi\u015firmi\u015fler, servis yapm\u0131\u015flar, bulunabilirli\u011fini, ula\u015f\u0131labilirli\u011fini sa\u011flamak i\u00e7in Gl\u00fctensiz g\u0131dalar satan ayr\u0131 ma\u011fazalar, kafeler, d\u00fckkanlar, departmanlar, restoranlar a\u00e7m\u0131\u015flar hatta internetten bu \u00f6zel g\u0131dalar\u0131n sat\u0131\u015f\u0131n\u0131 yapm\u0131\u015flar.<\/p>\n\n\n\n<p>T\u00fcrkiye\u2019de de \u00c7\u00f6lyak rahats\u0131zl\u0131\u011f\u0131 ve Gl\u00fcten hassasl\u0131\u011f\u0131 artt\u0131k\u00e7a k\u0131smen bizim \u00fclkemizde de bu duyarl\u0131l\u0131k ba\u015fl\u0131yor. Gl\u00fctensiz yiyecekler sat\u0131lmaya ve servis edilmeye yava\u015f yava\u015f s\u0131ra geliyor. Siz de diyorsunuz ki \u2018Allah Allah o kadar da diyet yapt\u0131m ve dikkat ettim neden bu ba\u015f\u0131ma geldi\u2018 diye d\u00fc\u015f\u00fcnebiliyorsunuz. V\u00fccutlar\u0131m\u0131z\u0131n bir kimli\u011fi var ve en ufak kusuru bile affetmiyor.<\/p>\n\n\n\n<p>Bu\u011fday, arpa, \u00e7avdarda Gl\u00fcten var! Yulaf\u0131n \u00f6z\u00fcnde ise yok! Ama dikkat! Kom\u015fu tarlada bu\u011fday, arpa, \u00e7avdar ekilmi\u015fse ve hasat d\u00f6neminde yulaf ile ayn\u0131 depolarda bulundurulmu\u015fsa bile \u00e7apraz bula\u015fma (!) olabilece\u011fi i\u00e7in yulaf \u00fcr\u00fcnlerinde belirli bir sertifika (!) olmal\u0131 ki g\u00fcvenerek yenilebilinsin.<\/p>\n\n\n\n<p>Bu i\u015f san\u0131ld\u0131\u011f\u0131ndan da zor ve uzun vadede yorucu. Gl\u00fcten diyeti yapmak durumunda olanlar\u0131n ve yak\u0131nlar\u0131n\u0131n azami dikkatli olmalar\u0131 gerekiyor. Kendi hayat\u0131mda bunu \u00e7ok zorlu ta\u015f\u0131yanlardan biriyim. O\u011flumun diyeti eskaza \u015fa\u015farsa neler ya\u015fayabilece\u011fini yakinen g\u00f6rd\u00fcm. \u00dc\u00e7 -d\u00f6rt y\u0131l aksat\u0131lmadan yap\u0131lan kat\u0131 bir diyet ile \u00e7ok m\u00fckemmel yol alm\u0131\u015ft\u0131k. Diyet \u00e7ok ba\u015far\u0131l\u0131 olmu\u015ftu ve adeta beyin sisi azalm\u0131\u015f ve davran\u0131\u015flar\u0131 inan\u0131lmaz boyutta d\u00fczelmi\u015f, konu\u015fma ve alg\u0131 sanki akranlar\u0131 gibi olmu\u015ftu. O zamanlar \u0130stanbul\u2019da imal edilen Gl\u00fctensiz halk ekme\u011fini bir yak\u0131n\u0131m ayda bir-iki defa getiriyordu S\u00fcre\u00e7 me\u015fakkatliydi \u00e7\u00fcnk\u00fc \u00f6nceden sipari\u015f veriyordunuz, \u00fcretimi bekliyordunuz, isme \u00f6zel rezerve ediliyordu. Gl\u00fctensiz ekmek her halk ekmek noktas\u0131nda mevcut de\u011fildi. Ald\u0131ktan sonra saklama ko\u015fullar\u0131 ve ula\u015f\u0131m sorunu \u00e7\u0131k\u0131yordu ve kimi zaman da bayatlam\u0131\u015f olarak, kimi zaman kesince a\u015f\u0131r\u0131 ufalanarak, kimi zaman da i\u00e7inden k\u00fcflenmi\u015f olarak elimize ula\u015f\u0131yordu ve paketlenirken s\u0131cak ekme\u011fin \u00fcst\u00fcne naylon sararak ambalajland\u0131\u011f\u0131 i\u00e7in naylonun kokusu siniyordu ve zaten kokulara \u00e7ok hassas olan o\u011fluma yedirebilmem m\u00fcmk\u00fcn olam\u0131yordu. D\u00fc\u015f\u00fcnebiliyor musunuz bekledi\u011finiz \u00fcr\u00fcn geliyor alternatifi yok ve maalesef istenilen \u00f6zelli\u011fi ta\u015f\u0131m\u0131yor.<\/p>\n\n\n\n<p>O\u011flum diyete ba\u015flamadan \u00f6nce adeta bir hamburger canavar\u0131yd\u0131 ve eskiden \u00e7ok me\u015fhur olan bir restorandan hamburger yemeyi \u00e7ok severdi, ama diyet yapt\u0131\u011f\u0131 i\u00e7in art\u0131k m\u00fcmk\u00fcn g\u00f6r\u00fcnm\u00fcyordu. Y\u00fcr\u00fcy\u00fc\u015fe \u00e7\u0131kt\u0131\u011f\u0131m\u0131zda \u00f6n\u00fcnden ge\u00e7erken can\u0131 \u00e7ekiyordu, acil bir \u00e7\u00f6z\u00fcm bulmal\u0131yd\u0131m. Mecburen gidip sahipleriyle ve personelle \u00f6nceden konu\u015fup i\u015fin \u00f6nemini anlat\u0131p o\u011fluma moral olsun diye oradan hamburger yeme\u011fe devam edece\u011fini ancak hamburgerin \u0130stanbul Halk Ekmek fabrikas\u0131ndan gelen o spesifik Gl\u00fctensiz ekmeklerden yap\u0131l\u0131rsa ona dokunmayaca\u011f\u0131n\u0131 anlatmak durumunda kald\u0131m, hat\u0131r i\u00e7in kabul ettiler. Ben ekme\u011fi oraya \u00f6nceden b\u0131rak\u0131yordum ve personel b\u00fcy\u00fck bir anlay\u0131\u015fla o\u011flumu \u2018bundan sonra herkes bu ekmekle yap\u0131lm\u0131\u015f hamburger yiyecek\u2018 diye uygun bir dille ikna etmeye \u00e7al\u0131\u015f\u0131yorlard\u0131 ve biz gitti\u011fimizde sadece o\u011fluma \u00f6zel hamburger yap\u0131yorlard\u0131. \u00c7ok lezzetli olmuyordu ve isteyerek yemiyordu ama ya\u015fam al\u0131\u015fkanl\u0131\u011f\u0131n\u0131 da bozmam\u0131\u015f oluyordu. Dedim ya elinde imkanlar olmasa da \u00e7ok iyi insanlarla ku\u015fat\u0131lm\u0131\u015f benim g\u00fczel \u00fclkem, T\u00fcrkiye\u2019m.<\/p>\n\n\n\n<p>Bug\u00fcn sizlere Urla\u2019m\u0131za \u0130VME kazand\u0131rm\u0131\u015f bir yak\u0131n arkada\u015f\u0131m\u0131n tarifini yazmak istiyorum. Bu g\u00fczel arkada\u015f\u0131m Bilge Bengisu \u00d6\u011f\u00fcnl\u00fc. D\u00fcnyada ba\u015flayan Slow Food anlay\u0131\u015f\u0131n\u0131 T\u00fcrkiye\u2019ye ve Urla\u2019m\u0131za \u2018Do\u011fal Sofra\u2019 konseptiyle ta\u015f\u0131yarak gen\u00e7lerde al\u0131\u015fkanl\u0131k yapt\u0131\u011f\u0131na inan\u0131lan fast food\u2019un h\u0131zl\u0131 ve pratik ama asl\u0131nda yeterince beslemeyici (!) cazibesine kap\u0131larak bizlerin, muhte\u015fem olarak pi\u015firdi\u011fimiz, kendi yemek k\u00fclt\u00fcr\u00fcm\u00fczden kopmamalar\u0131 i\u00e7in Urla Do\u011fal Sofra g\u00f6n\u00fcll\u00fc\u011f\u00fcn\u00fc olu\u015fturabilmi\u015f ve t\u00fcm g\u00f6n\u00fcl verenlerle geleneksel, besleyici, lezzetli, al\u0131\u015f\u0131lm\u0131\u015f, benimsenmi\u015f Urla\u2019n\u0131n yemek k\u00fclt\u00fcr\u00fcn\u00fcn unutulmamas\u0131n\u0131 sa\u011flamaya \u00e7al\u0131\u015fan bir ba\u015far\u0131 hikayesine sahiptir. Terra Madre- Toprak Anaya Sayg\u0131, Mart Dokuzu -Ot Bayram\u0131, Enginar Festivali, Ba\u011f Bozumu etkinliklerinde t\u00fcm g\u00f6n\u00fcll\u00fclerle ba\u015frol\u00fc \u00fcstlenmi\u015f ve erkence zeytinlerinin ve Urla\u2019m\u0131zda yap\u0131lan bize \u00f6zg\u00fc \u00fcr\u00fcnlerin co\u011frafi i\u015faret almas\u0131nda \u00f6nayak olmu\u015ftur ve Ba\u011f Yolu anlay\u0131\u015f\u0131n\u0131n madalyal\u0131 uygulay\u0131c\u0131s\u0131d\u0131r. \u00dclkemizdeki b\u00f6yle \u00f6zel insanlar\u0131n hayat\u0131m\u0131zdaki \u00f6nemini kavrayabilmemizi diliyorum. Ellinizle a\u00e7arak, tart kal\u0131b\u0131n\u0131n i\u00e7ine yerle\u015ftirin ve kenarlar\u0131n\u0131 en az 2 cm. kadar y\u00fckseltin. 180 derece f\u0131r\u0131nda k\u00f6r pi\u015firin, yani i\u00e7i bo\u015f olarak 15-20 dakika pi\u015firin. Rende ka\u015far\u0131 da \u00fczerine serpi\u015ftirip, \u00fczeri k\u0131zarana kadar, yakla\u015f\u0131k 25 dakika, 180 derece f\u0131r\u0131na tekrar al\u0131yoruz.<\/p>\n\n\n\n<p>Umar\u0131m tamam\u0131 glutensiz olan bu tarifi be\u011fenirsiniz.
